Celebrate dad with every bite

Nothing beats a good meal to show appreciation, especially one that hits home with classic local flavours. Here are simple, delicious, recipe ideas perfect for Father's Day, using uncomplicated ingredients you can find at any supermarket.

  • Gourmet boerie roll

Take the classic match-day staple and elevate it slightly for Father's Day.

Ingredients

1 pack boerewors

4 fresh hot dog buns or soft rolls

2 large onions, thinly sliced

1 tbsp brown sugar

 1 tbsp vinegar

Your favourite sauces: Chutney, tangy mayonnaise, or mustard.

Method

  • Heat a splash of oil in a pan over medium-low heat. Add the sliced onions and cook slowly for about 15 minutes until soft. Stir in the brown sugar and vinegar, cooking for another 5 minutes until sticky and dark golden brown.
  • Pan-fry the boerewors in a hot skillet or cook it over the coals if you have a fire until cooked through.
  • Slice the rolls, add a layer of the sweet caramelised onions, tuck in a piece of hot boerewors, and finish with a good drizzle of chutney and mayonnaise.

Sweet & sticky chicken skewers

Sosaties can take days to marinate, but you can cheat the system with this quick three-ingredient marinade that delivers that perfect sweet-and-sour profile dad will love.

Ingredients

4 large chicken breasts, cut into bite-sized cubes

1 cup peach or fruit chutney

2 tbsp smooth apricot jam

1 tbsp curry powder

1 large onion cut into chunks to thread between the chicken.

Method

  • In a bowl, combine the chutney, apricot jam, and curry powder. Season with a pinch of salt.
  • Toss the chicken cubes and onion chunks into the mixture. Let it sit for at least 30 minutes or overnight if you have time).
  • Thread the chicken and onions onto wooden skewers (soak the skewers in water first so they don't burn).
  • Braai over medium coals for 8 to 10 minutes, turning often and brushing with the leftover marinade until sticky and cooked through.

 

Loaded fries or wedges

This twist on loaded fries replaces standard chili with rich, spicy local chakalaka and bacon bits.

Ingredients

1 large bag of frozen oven chips or wedges

1 can of store-bought Chakalaka (mild or hot, depending on his preference)

200g bacon, chopped

1.5 cups cheese Cheddar, grated

Spring onion, chopped for garnish

Tangy mayonnaise, or your favourite BBQ sauce.

Method

  • Bake or fry the chips according to the packet instructions until they are extra crispy.
  • While the chips are baking, fry the chopped bacon pieces in a dry pan over medium-high heat until they are completely crisp. Scoop them out onto a paper towel to drain excess oil.
  • Pile the hot chips into an oven dish. Warm the  chakalaka slightly, then spoon it generously over the centre of the chips.
  • Scatter the grated cheese over the chakalaka. Pop the dish back into the hot oven or under the grill for 3 to 5 minutes until the cheese is completely melted and gooey. Garnish with spring onions and serve immediately.
