1 pack boerewors
4 fresh hot dog buns or soft rolls
2 large onions, thinly sliced
1 tbsp brown sugar
1 tbsp vinegar
Your favourite sauces: Chutney, tangy mayonnaise, or mustard.
Method
- Heat a splash of oil in a pan over medium-low heat. Add the sliced onions and cook slowly for about 15 minutes until soft. Stir in the brown sugar and vinegar, cooking for another 5 minutes until sticky and dark golden brown.
- Pan-fry the boerewors in a hot skillet or cook it over the coals if you have a fire until cooked through.
- Slice the rolls, add a layer of the sweet caramelised onions, tuck in a piece of hot boerewors, and finish with a good drizzle of chutney and mayonnaise.

4 large chicken breasts, cut into bite-sized cubes

Method
- In a bowl, combine the chutney, apricot jam, and curry powder. Season with a pinch of salt.
- Toss the chicken cubes and onion chunks into the mixture. Let it sit for at least 30 minutes or overnight if you have time).

- Scatter the grated cheese over the chakalaka. Pop the dish back into the hot oven or under the grill for 3 to 5 minutes until the cheese is completely melted and gooey. Garnish with spring onions and serve immediately.
