No-bake lemon fridge tart

Preparation: 15 minutes

 Chilling: 3–4 hours

 Serves: 6

Ingredients

1 packet tennis biscuits

1 tin condensed milk

250 ml fresh cream

Juice of 2 lemons

Lemon zest for garnish (optional)

Method

  • Arrange the biscuits in a single layer at the bottom of a small dish, breaking them where necessary to cover the base.
  • Whip the fresh cream until soft peaks form. In a separate bowl, mix the condensed milk with the lemon juice until the mixture thickens slightly.
  • Gently fold the whipped cream into the lemon mixture until smooth. Pour the filling over the biscuits and spread evenly.
  • Crush a few extra biscuits over the top or add lemon zest for decoration. Refrigerate for at least three to four hours, or until firm, before serving.
Creamy, tangy and deliciously refreshing, this lemon fridge tart is ideal for those days when you want dessert without the extra heat of an oven.

Homemade orange juice ice lollies

Preparation: 5 minutes

 Freezing: 4–6 hours

Makes: 6, depending on mould size

Ingredients

2 cups orange juice, freshly squeezed

1 cup cold water

1 teaspoon lemon juice (optional)

A little sugar,

Method

  • Pour the orange juice into a jug. Add the cold water if you prefer a lighter flavour, then stir in the lemon juice.
  • Taste and add a little sugar only if necessary. Pour the mixture into ice-lolly moulds.
  • If you do not have moulds, use small clean plastic cups and insert wooden sticks once the mixture has partially frozen.
  • Freeze for four to six hours or until completely solid. Run the outside of the moulds briefly under lukewarm water to release the ice lollies.

TIP: You can also use mahewu-flavoured drinks or other fruit juices, depending on what you have at home.

Forget buying ice lollies every time the temperature rises. With fruit juice and a freezer, you can make your own refreshing treats.

 Creamy banana and yoghurt cups

3 ripe bananas

2 cups plain yoghurt

2 tablespoons honey or sugar, optional

1 packet plain Marie biscuits

½ teaspoon cinnamon (optional)

Method

  • Peel the bananas and mash two of them in a bowl until smooth. Stir in the plain yoghurt and honey or sugar, if using.
  • Crush the biscuits into small crumbs. Slice the remaining banana.
  • In small glasses or bowls, layer the biscuit crumbs, banana-yoghurt mixture and banana slices.
  • Sprinkle a little cinnamon on top if desired. Refrigerate for about 30 minutes before serving.
Bananas are a familiar, easy-to-find fruit that can be turned into a simple dessert with plain yoghurt and a few crushed biscuits. This is a good way to use ripe bananas before they go to waste.
