Easter is a time for gathering, reflection and celebration, but in today’s fast-paced world, not everyone has hours to spend in the kitchen. The good news is that you don’t need elaborate preparations to create a festive and memorable meal. With a few clever shortcuts and simple recipes, you can still serve dishes that feel special without the stress.

Here are time-saving recipes that bring both convenience and celebration to your Easter table:

1. One-Pan Honey Glazed Chicken & Veg

Ingredients

6 chicken pieces

3 carrots (chopped)

2 potatoes (cubed)

3 tbsp honey

2 tbsp soy sauce

2 cloves garlic (crushed)

Salt and pepper

Method:

Preheat oven to 180°C.

Place chicken and vegetables in a large baking tray.

Mix honey, soy sauce, and garlic, then pour over everything.

Season and toss well.

Roast for 40–45 minutes until golden and cooked through.

2. Creamy Easter Pasta Salad

Ingredients

250g pasta

1 cup cooked chicken or ham (chopped)

½ cup mayonnaise

½ cup plain yoghurt

1 cup mixed vegetables (peas, corn, carrots)

Salt and pepper

Method:

Cook pasta according to package instructions and cool.

In a bowl, mix mayonnaise and yoghurt.

Add pasta, chicken/ham, and vegetables.

Season and mix well. Chill before serving.

3. No-Bake Easter Fridge Tart

Ingredients

1 packet tennis biscuits

1 tin caramel treat

1 cup cream (whipped)

Chocolate eggs or flakes for topping

Method:

Layer biscuits at the base of a dish.

Mix caramel with whipped cream.

Spread mixture over biscuits and repeat layers.

Decorate with chocolate eggs.

Chill for 2–3 hours before serving.

Easter cooking does not have to be overwhelming. With a little planning and a focus on simple yet satisfying dishes, even the busiest households can create a warm and inviting table.

This is perfect as a side dish or light main and can be made ahead of time.
